Ukrainian Egg Salad with Mushrooms


  • 1/2-pound mushrooms of your choice from Dunn Mushroom Farm LLC

    • Oyster or Shiitake mushrooms are our choices for this recipe​

  • 1 Medium sweet onion

  • 1 Tablespoon of butter

  • 1 Tablespoon of olive oil

  • 4 boiled eggs, cut into cubes

  • 1 English cucumber, cut into cubes

  • 1 tablespoon lemon juice

  • Pickle Juice - To taste

  • Ground black pepper and Salt – To taste

  • 2 tablespoons mayonnaise

How to Make It

Slice the mushrooms and onions and sauté them in butter and olive oil for 5 minutes. Let them cool.
While the mushrooms and onions are cooling, dice boiled eggs and cucumbers, put them in the bowl.
Once cooled, add mushrooms and onions to the bowl, add lemon juice and pickle juice, mayonnaise and gently mix them all together. Season with salt and pepper. Put in the fridge to chill for 20-30 min. Enjoy!
